{"id":268,"date":"2008-05-14T17:00:32","date_gmt":"2008-05-14T21:00:32","guid":{"rendered":"http:\/\/www.planetjune.com\/blog\/?p=268"},"modified":"2025-01-16T08:15:30","modified_gmt":"2025-01-16T13:15:30","slug":"banana-brownie-challenge","status":"publish","type":"post","link":"https:\/\/www.planetjune.com\/blog\/banana-brownie-challenge\/","title":{"rendered":"banana brownie challenge"},"content":{"rendered":"<p>Whilst browsing the Food Network Canada website, I stumbled upon the Foodtv.ca Cooking Club Challenge: a monthly online challenge to make a specific recipe from one of their shows, with some cookbook prizes for the winners. The challenge for May is <a href=\"https:\/\/web.archive.org\/web\/20210421051428\/https:\/\/www.foodnetwork.ca\/recipe\/banana-brownies\/8615\/\" target=\"_blank\" rel=\"noopener\">Michael Smith&#8217;s Banana Brownies<\/a>, and I just happened to have all the ingredients in my kitchen already, so I thought I&#8217;d join in.<\/p>\n<p>The <a href=\"https:\/\/web.archive.org\/web\/20210421051428\/https:\/\/www.foodnetwork.ca\/recipe\/banana-brownies\/8615\/\" target=\"_blank\" rel=\"noopener\">original recipe<\/a> is <del datetime=\"2008-05-14T20:19:35+00:00\">somewhat<\/del> very high in calories and fat, so I made a few modifications: <\/p>\n<ul>\n<li>Halved the recipe to make a smaller batch.<\/li>\n<li>Substituted semi-sweet chocolate for dark chocolate (from necessity &#8211; it was all I had in stock)<\/li>\n<li>Reduced the fat by substituting half the butter with the same weight in unsweetened applesauce. <\/li>\n<li>Made individual brownies by pouring the batter into a muffin pan &#8211; my half-sized batch filled 12 muffin cups (3\/4 full) perfectly. <\/li>\n<li>Reduced the baking time to 1hr 10 mins to compensate for the smaller cake size. <\/li>\n<\/ul>\n<p>They turned out very well &#8211; not overly sweet or rich, nicely dense, and very tasty. The banana flavour is quite noticeable, although I think that may have been due to my bananas being very ripe! With a bit of whipped cream on the top (which is entirely justified with the lower fat mods and smaller portion size) they make a very nice dessert. Have a virtual taste:<\/p>\n<p><img decoding=\"async\" src=\"\/blog\/images\/bananabrownies.jpg\" alt=\"banana chocolate brownies\" \/><\/p>\n<p>To enter the Cooking Club Challenge, you just submit a photo and a description of your creation.
