Chocolate Baked Cheesecake175g plain chocolate digestives
100g plain chocolate
at least 2 tbsp coffee liqueur
100g brown sugar
350g cream cheese
2 tbsp cornflour
Crush biscuits. Melt butter and mix with biscuits. Grease a 7" loose-bottomed tin. Press mixture into base of tin and leave to set in fridge.
Melt chocolate and stir in liqueur. Beat eggs and sugar until thick, add cream cheese and stir. Add chocolate and cornflour.
Pour over top of biscuit base and bake at gas mark 3 (160C) for about 1 hour until set.
Leave to cool.
Decorate with whipped cream and grated chocolate if desired.
